Cumberland Sauce
This is my version of Cumberland Sauce. Instead of redcurrant jelly, orange & lemon juice to give a smooth runny sauce, I have used whole redcurrants and finely chopped oranges & lemons to give a thick chunky sauce. A generous measure of port gives added flavour and richness. Serve with lamb, ham or game meats. It would also be delicious spread on toast, topped with grated cheese and browned under the grill.
A fiery jelly with pieces of red chillies suspended in an apple jelly --a little will certainly go a long way!
